Cheddar Ale Fondue

Ingredients:
  • 1 pound sharp cheddar cheese
  • 1 tablespoon corn starch
  • 1 cup ale
  • 1 clove garlic
  • fresh black pepper
  • 1/4 teaspoon fresh grated nutmeg
  • dash of cayenne (optional)
  • Crusty bread or bagels.

Preparation:

In a bowl, shred cheese and toss with corn starch until coated. In a fondue pot, heat ale over medium heat until it begins to bubble. Finely mince garlic and add to pot. Cook for a minute or two until the ale is infused with the garlic.

Slowly begin to add cheese. Allow cheese to melt thoroughly before adding more. When all of the cheese is incorporated, lower the heat and serve with pieces of bread (pumpernickel works well) or bagel.

Try experimenting with different types of ale, such as Guinness.
