Balsamic Chicken with Mushrooms

Ingredients:
  • 4 boneless skinless chicken breasts
  • 1/2 lb white or crimini mushrooms
  • 2 bay leaves
  • 4 cloves garlic
  • 1/4 teaspoon thyme
  • 1/4 cup balsamic vinegar
  • 3/4 cup red wine
  • 2 tablespoons olive oil
  • salt and pepper

Preparation:

Heat olive oil in a heavy sauté pan over medium-high heat. Season the chicken breasts with salt and pepper on both sides and place in pan. Cook chicken until browned on all sides.

Reduce heat to medium, add garlic and continue to cook for 1 minute. Add balsamic, wine, bay leaves, and thyme. Cook for 5-10 minutes, or until chicken is thoroughly cooked.

Add mushrooms to pan and cook for another 5-10 minutes, or until mushrooms are almost done. Remove chicken and continue cooking mushrooms until sauce reduces to a glaze. Add chicken back into pan and coat the breasts with glaze. Spoon mushrooms over chicken and serve.
